Dilly Beans—with a new twist!

Another tried and true, family recipe is my uncle's Dilly Beans. Dilly Bean making is a tradition and last weekend I made them with a new twist.

(Side note: I should add that I hate throwing away food that is perfectly good and usable!) With my counter covered with green bean bits—aka “nubbins”—cut to in the jar, it seemed a shame to waste them. So, Kate, my assistant suggested, "Why not pickle those too"? Next thing you know, those nubbins went into jars and got dilly beaned too! 

I have already eaten the nubbins as a snack and put them in salads. They are perfectly delicious!
