Lemon Honey Lavender Jelly
This jelly smells so good in the making, if your house is on the market, I’d suggest it instead of baking cookies to make your home fragrant!
1 ½ cups fresh squeezed lemon juice
5 cups honey (any kind will do: clover, wildflower, orange blossom etc)
¾ cup grated lemon zest
1 Tbs, dried French lavender flower petals
6 oz. liquid fruit pectin (2 pouches)
In heavy saucepan combine honey, lemon juice, lemon zest and lavender petals. Bring to a full boil over high heat stirring constantly. Stir in pectin and continue to boil 1 minute and stirring constantly. Remove from heat and skim off foam with metal spoon. Ladle hot mixture into hot sterilized jars, leaving ¼” headspace at top of jar. Wipe rims with damp clean cloth or paper towel. Center prepared lids on top of filled cleaned jars then secure with band that you finger-tip tighten. Place jars into canner with simmering water covering jars by at least 1”. Bring to a boil and process for 5 minutes. Remove jars to cloth covered counter until lids pop and seal is secure.
