Pork Villebois: FREE Recipe

Another one that will be in the cookbook: Pork Villebois. It’s divine! See my video of the process and the recipe below

Pork Villebois

3 to 4 lbs. pork loin roast

1 tart crisp apple

1 small sweet onion

Lawry’s seasoned salt

Ground pepper

Sea salt

1 12 oz. jar bitter orange marmalade

½ tsp garlic powder

1 ½ tsp. ground ginger

2 Tbs. soy sauce

2 Tbs. light brown sugar

Place pork fat side up on oblong sheet of heavy duty foil. Slice roast ¾ of the way through into ¾” slices. Sprinkle salt, pepper and seasoned salt between slices and on top. In bowl, whisk together marmalade, garlic powder, ginger, soy sauce and brown sugar. Drizzle sauce between slices and insert a ½” wedge of apple and onion between each slice. Tie the roll lengthwise with 2 strings each 1/3 of the way in from each side’s edge. Spread the remaining sauce over entire roll, then wrap carefully in foil, making sure top is folded and ends rolled up.

You now have a choice of how to cook it:

1.    Place on grill for 30 minutes. Then open foil, carefully turn roll over, baste and let cook 10-15 minutes more.                      OR

2.    Place pork packet on cookie sheet into a 400 degree preheated oven. Cook for 30 minutes. Then open foil, baste and cook 10 to 15 minutes more. If not as brown as you like, turn on broiler, baste, place pork on top shelf and broil until sauce is bubbling and fat sizzling.
