Pickled Tomatoes from the Garden

Come into my garden and play! By mid-summer, the herbs are established, the cutting flowers are growing, the raspberries and strawberries are gone, but the blackberries are fruiting.

The first harvest from the garden every year is a combination of cucumbers and cherry tomatoes. We have covered pickling cucumbers in the past, so now we’ll focus on pickling cherry tomatoes. These are yummy for snacking right out of the jar on a toothpick, pierced on skewers with basil and mozzarella or feta cheese, mixed sliced in salads, tossed in pasta with olive oil and parmesan. The possibilities are endless.
